First, this is not a session level question, so for more responses, you might try re-posting under General QA or Exchanges/ECNs.

To address your question, though: the display/hidden aspects of an order and any pegging instructions are controlled through different fields. Depending on the venue/broker that you are routing to they may support one or the other or both & different venues may look for the info slightly differently.

For display properties, it is most common to use MaxFloor (111) or MaxShow (210). That being said, this is usually done for reserve orders (iceberg type functionality) where a portion of the order is shown, the rest hidden. I’ve seen 210=0, but that is the exception, rather than the rule. The venue you’re referring to, if they offer a fully non-displayed order, it’s probably done through a custom field.

Pegging is handled through a set of fields that may be custom or not depending on the version of the protocol that you’re using, who you’re connecting to and the functionality offered. FIX 4.4 has fields for:
839 PeggedPrice
837 PegLimitType
835 PegMoveType
836 PegOffsetType
211 PegOffsetValue
838 PegRoundDirection
840 PegScope
